Ingredients

  • · 1 garlic clove, halved
  • · 1 cup dry white wine
  • · 1 tsp lemon juice
  • · 8 oz Gruyere, grated
  • · 8 oz Emmental, grated
  • · 1 tbsp cornstarch
  • · 1 tbsp kirsch (optional)
  • · Fresh nutmeg and black pepper
  • · Crusty bread, cut into cubes, for dipping

Method

  1. 1 Rub the inside of the pot with the halved garlic clove.
  2. 2 Pour in the wine and lemon juice and warm it.
  3. 3 Toss the grated Gruyere and Emmental with the cornstarch.
  4. 4 Add the cheese a handful at a time, stirring in slow figure-eights until each one melts before the next goes in.
  5. 5 Stir in the kirsch (optional), a grating of fresh nutmeg, and black pepper.
  6. 6 Move the pot to a tabletop fondue burner and dip cubes of crusty bread.

Keep stirring and keep the heat gentle once it is smooth, so it never scorches or splits.
