Ingredients
- · 1 sheet puff pastry, thawed
- · 1 cup milk
- · ¾ cup sugar
- · ¼ cup flour
- · 1 cinnamon stick
- · 1 strip lemon peel
- · 4 egg yolks
- · Ground cinnamon, to dust
Method
- 1 Heat the oven as hot as it goes, 500°F / 260°C.
- 2 Roll the puff pastry into a tight log, slice into 12 discs, and press each into a muffin tin so the spiral shows on the rim.
- 3 Simmer the milk, sugar, and flour with the cinnamon stick and lemon peel until thick, then take out the cinnamon and peel.
- 4 Off the heat, whisk in the egg yolks fast so they do not scramble.
- 5 Fill each shell three-quarters full and bake 12 to 15 minutes, until the tops blister dark.
- 6 Cool 5 minutes, dust with cinnamon, and eat warm.
The shells are not baked first. Raw pastry and custard go into the very hot oven together, which crisps the pastry while the custard blisters on top.
