Ingredients

  • · 2 lb chicken drumsticks (or thighs)
  • · 4 scallions
  • · 1 to 2 Scotch bonnet chillies
  • · 3 garlic cloves
  • · 1 tbsp ground allspice
  • · 1 tsp dried thyme (or fresh sprigs)
  • · 3 tbsp soy sauce
  • · 2 tbsp brown sugar
  • · Juice of 1 lime
  • · Rice and beans, to serve

Method

  1. 1 Blend the scallions, chillies, garlic, allspice, thyme, soy sauce, brown sugar, and lime juice into a dark marinade.
  2. 2 Rub it all over the chicken, into every crease.
  3. 3 Marinate in the fridge at least 1 hour. Overnight is much better.
  4. 4 Grill over medium coals about 30 minutes, turning, until charred and cooked through (165°F / 74°C inside).
  5. 5 Rest 5 minutes, then serve with lime and rice and beans.

Scotch bonnets are hot. One gives you warmth, two give you the real thing.
